Like the lotus at the heart of Sra Bua, this new chapter begins with Thailand’s biodiversity. Led by Chef Num Weerawat, the experience is shaped by ingredients at their seasonal best, the places they come from, and the farmers, fishermen, foragers and producers.
Each dish starts with respect for the ingredient and the knowledge behind it. Contemporary ideas take shape without losing sight of what camebefore. The result is a journey through Thailand, rooted in memory, shaped by the present and always looking towards what comes next.

Thai food often feels familiar before it is explained. The fragrance of herbs, the balance of heat, sourness and richness, rice at the centre of the meal, and flavours deepened through fermentation all carry a sense of home.
Chef Num and his team begin with these foundations, drawing from Thailand’s regions, seasons and local knowledge to explore new ways to express them. Respect for the ingredient guides each step, bridging memory and discovery while keeping the flavours unmistakably Thai.

TasteSpace makes biodiversity a living part of the space, to be seen, felt and discovered throughout; MILIN interprets Sra Bua through the silhouettes and details of the JARIT BUA uniforms; while Khun Aor Sutthiprapha reflects Thailand’s diverse terrain through bespoke ceramics.
Together, these collaborations weave contemporary Thai creativity throughout the restaurant, allowing the story of Sra Bua to unfold far beyond the plate.
